Rollright
Rollright is a soft cheese banded in spruce bark. A delicate, peachy-pink rind ripens the cheese within to a rich, spoonable texture. The cheese develops rich flavours of crème fraiche, cured ham, and mustard seed, with a smoky, woodsy aroma.

Evenlode
A small washed rind soft cheese. During the ripening of Evenlode, the cheese is repeatedly washed in a special brine solution to develop it’s tender, orange rind. When young, the cheese is curdy and lactic, developing a soft breakdown below the rind as it ages. Once fully ripened, the cheese is soft and full of flavours of beef stock, roast onions and peanuts.

Moreton
Our take on a rustic, Alpine cheese, Moreton is aged slowly in a cool room during which time the cheeses are turned and brushed weekly to form a mixed rind of native moulds and yeasts. The cheese is rich and buttery with a delicious earthiness The texture is smooth, giving and silky.

Ashcombe
Ashcombe is a large, flat, disc shaped cheese which features a striking line of wood ash running through the centre of the cheese. The rind is carefully washed in a special brine solution to develop a bright terracotta hue. The rind is meaty and savoury, while the paste has aromas of warm milk and hay. The flavours are comforting and rich, reminding us of melted butter and fresh hazelnuts.

Yarlington
Yarlington is the result of a collaboration between cheesemaker David Jowett, cider maker Tom Oliver and Sam Wilkin. The cheese sits somewhere between Evenlode and Rollright in terms of make process. The rind is gently washed in a solution of brine and Tom’s Yarlington Mill 2019 cider.Yarlington itself is named after Yarlington Mill in Somerset. The home of the first example of the Yarlingtom Mill apple now one of the cornerstones of British Cider making.
